TESSHU Chef Knife 210mm blue II steel / stainless cladding with Custom Hawaiian Curly Koa Handle Gyuto
The blade is core blue II steel and stainless cladding(Sanmai).
TESSHU is our Japanese cooking knife brand name and, Kiryu Manufactureing Co. made the blades which is very skillful craftsmanship in Sanjyo, Niigata.
The company which products this blade also makes their blades, and they make so many of the other famous knife makers knives in Japan. They make lots of OEM products, so their name might not come out often, but we see their blades often.
It is western style handle on it, and it is used Sanmai-uchi which is core steel (blue II steel) with soft iron (stainless) cladding, so it is able to bring up higher HRC compared with mono steel blade.
Handle is made by solid Hawaiian curly Koa.
