MASAHIRO Honesuki Knife 150mm (5 7/8") MBS-26 Stainless steel blade knife
This knife is for boning knife to remove meat from rib meat or de-bone chicken meat.
The differences between the Garasuki and Honesuki is;
Garasuki knife is for filleting whole chicken Garasuki blade is a little thicker than the Honesuki it is not flexible, and the blade is longer (180mm normally) with not much curve near the blade tip.
Honesuki is for deboning rib meat, so it has a little more curve to make it easier to remove the meat from the bones and a little less thickness. The blade is a little shorter(150mm) too.
This product is from the "MV Gyuto Series", designed to ensure a good balance between the blade and handle.
Each blade is hand-sharpened by a craftsman.
