I guess the steel plate is able to make approximately 2 pieces of 210mm chef knives.
It is constructed on 3 layers, and the both outside materials are SUS-10 stainless, and the middle of core steel is VG-10 stainless steel.
We have got it from Takefu Special Steel Co., Ltd. In Japan
It is not from China VG-10 steel.
VG-10 steel is high carbon stainless steel made by Takefu Special Steel Co., Ltd.
It is known as high quality stainless steel for cutleries.
VG-10 composition:
C: 0.95-1.05% Si: 0.35% Mn: 0.3-0.5% P: 0.03% S: 0.03% Cr: 14.5-15.5% Mo: 0.8-1.2% V: 0.25-0.35 Ni: 0.25-0.35 Co: 1.3-1.8% Cu: 1.3-1.8%
HRC: 59-60+
The steel plate is not heat treated, and it might be great thickness for kitchen knives, and pocket knives and, thin to medium thickness blades to make.
It is sandwiched by soft iron, so it is easier to sand it down compared with mono steel bar, and protecting bent the blade, and easier to make it straight again.
