I guess the steel plate is able to make approximately 10 pieces of 210mm or 240mm chef knives.

 

It is constructed on 3 layers, and the both outside materials are SUS-10 stainless, and the middle of core steel is AUS-10 stainless steel.

We have got it from Japanese steel distributor in Kyushu, Japan.

Ginsan stainless steel is made by Hitachi Steel Co. 

Ginsan Steel composition:

C: 0.95-1.10%, Si: less than 0.35%, Cr: 13.0-14.50%, Mn: 0.60-1.00%, P: less than 0.03%, S: less than 0.02%, 


HRC: 59+

 

 

The steel plate is not heat treated, and it might be great thickness for kitchen knives, and pocket knives and, thin blades to make.

It is sandwiched by soft iron, so it is easier to sand it down compared with mono steel bar, and protecting bent the blade.
